To Roast Your Coffee


In order to enjoy your coffee, it is best that you keep it as green beans. QY green beans have been processed with a Daika Low Temperature Dryer (see www.advancedryer.com) to a guaranteed 12% moisture content, and can be stored for one year without noticeable change in quality and taste.

The Roasting process is one of the most important steps in bringing out the best flavors of your coffee. Some people add cinnamon, vanilla, etc… but we recommend no additives. The high temperatures start a complex transformation that is not fully understood yet, but we know that the remaining water is evaporated, sugars are transformed into caramel, then some of that caramel is even burn into charcoal. Meanwhile, a host of volatiles and other organics are formed, bringing to the coffee its aroma and tastes.

Roasting can be done in your kitchen oven. We recommend 450?F for 15 minutes as standard time and temperature. During the roasting time, please turn over the beans several times for even roasting. You may vary the temperature and time to suit your own taste, following this principle:

1. A light brown roast will give a lighter aroma, more of a fruity, bitter-sweet taste, preferred by those who drink black.

2. A darker roast will give a more robust taste and more aroma, and will go well with those who prefer sugar and milk in their coffee.

It is also recommended that you let the roasted beans rest for a day before grinding. Roasted beans conserve well for a few weeks, but once ground, coffee should be used within a few days. As time goes by, so do the aroma and best flavors, so please keep your coffee supply fresh.

Grinders and combination grinder-brewer are widely available from department stores.

For those of you who prefer to let us roast for you, please just tell us in your order.  For a very small charge, and we will roast your selection and immediately ship to you in vacuum sealed bags. And yes, although we do not really want to do it, we will also grind it for you if you promise us that you will use your coffee in a short time.
